Gordon Ramsay’s Maze, Prague review

Once again our review system has fallen behind the times, with Gordon Ramsay withdrawing from the Maze restaurant in Prague. Apparently the celebrity chef is restructuring his company and the closing of the Prague fine dining restaurant may only be the tip of the iceberg.

It is a shame that the restaurant is (at the very least) losing its head chef and rebranding before we had a chance to encourage anyone to visit – although as many of the chefs will continue to work for the Hilton, it will be interesting to see what springs up in place of Maze.

Starter

Highlights were the main course of halibut with lobster risotto and the ‘toffee apple’ dessert which deserves a more elaborate description than it receives on the menu; apple jelly topped with a set toffee custard, layered with calvados sorbet and red apple foam. This was accompanied by a cinnamon donut and a sliver of hard butter caramel.

Main course

Service was faultless – the waiters were friendly and not pretentious at all which made the experience very pleasant and comfortable. At the end of the meal we asked to see the menu again to take some notes and the waiter suggested that he could arrange a quick tour of the kitchens once he had spoken to the manager.

The Pass

The manager then escorted us to the kitchen where we were shown the pastry area, the pass and the main kitchen. On being returned to our table we were then presented with a menu signed by the head chef – making for a fantastic overall experience to go with the fantastic meal.
